By itself, chai is merely the generic word for "tea" in much of South Asia and many other parts of the world. In western society chai has become to imply a spiced version of tea. Traditionally a strong base is used so that the spices and sweeteners do not overpower it. Rooibos is perfect in this manner because of the bold almost nuttiness flavor that is present. Sweetener is widely used in the preparation of chai. This brings out the flavor of the spices. Milk is also very popular. Many coffee and tea houses offer Chai Lattes. Condensed milk or even soy milk can be used as a dual purpose sweetener and dairy addition. As there is no fixed preparation method for chai there can be many variations. There are a wide variety of spices that can be used. When you think of chai you immediately think of "warm" spices. Any combination of the following can be used: cardamom, cinnamon, ginger, fennel seeds, peppercorn, cloves, ginger, and star anise. Cardamon being the most common added spice for its dominant characteristic while a combination of the others play a supplemental role. Our Red Bush Chai stays true to tradition with its boldness. Traditional - Sweetened with honey and garnished with a lemon.
Neat - Steep the desired amount of rooibos and enjoy straight up for a robust beverage.
Sweet - Add your favorite type of sweeter to bring out the flavors of the spices.
Latte - Steep as a concentrate and add steamed or heated milk. Soy milk is also a popular choice as it has a sweeter taste.
Tip - Because Rooibos has very low tannin levels steeping temperature and times are not strict. Generally the longer you steep the stronger the tea will be.
They add extra ingredients to their blend, that other chais might not usually have, like anise & peppercorn. It seems like rooibos would make a good base for a chai, and really lends itself to other flavors. But here, it seems like it takes away some space in the blend for more spices. The spicier the better for me! I love this, but I would love to see a full chai blend from Fusion. Their spice mix is so great, it would be a nice standalone.
